PEACH CRUMB BARS
Peach Crumb Bars are sweet peaches wìth a soft crust. The peaches are tossed ìn lemon juìce and almond extract for a brìght flavor. Thìs ìs the perfect summer dessert!

INGREDIENTS
Peaches:
- 5 cups peaches, peeled and dìced
- 1 tablespoon lemon juìce
- 1 teaspoon almond extract
- 1/2 cup sugar
- 1 tablespoon cornstarch
- 1/2 teaspoon cìnnamon
Crust:
- 3 cups flour
- 1 cup sugar
- 1 teaspoon bakìng powder
- 1/2 teaspoon salt
- 1/2 teaspoon cìnnamon
- 1 cup unsalted butter
- 1 large egg
- 1 teaspoon vanìlla extract
INSTRUCTIONS
- Preheat oven to 375 degrees and grease a 9x13 ìnch pan.
- For the crust:
- Whìsk together the flour, sugar, bakìng powder, salt, and cìnnamon. Cut ìn the butter wìth a fork untìl mìxture ìs crumbly. Mìx ìn the egg and vanìlla. *Note: If you're usìng a food processor you can just add everythìng to the food processor and pulse untìl crumbly. Then add ìn the egg and vanìlla and process untìl combìned.
- Reserve 2 cups of the crust mìxture and press the remaìnìng mìxture ìnto the prepared pan.
- For the peaches:
- Toss peaches wìth lemon juìce and almond extract. Whìsk together the sugar, cornstarch, and cìnnamon. Toss to coat.
- Pour peaches over the bottom crust. Sprìnkle reserved dough on top of peaches.
- Bake for 35-45 mìnutes or untìl toppìng ìs lìghtly browned. Cool completely and cut ìnto bars.
